Apple Walnut Cake

2 cups sugar , ½ cup margarine, 2 large eggs, 2 teaspoons vanilla
2 teaspoons baking soda, 2 cups all-purpose flour, 1 teaspoon salt, 1 teaspoon cinnamon
4 cups apples, sliced thin
1 cup walnuts or pecans, chopped

1.      Cream margarine and sugar in mixing bowl.  Add beaten eggs and vanilla extract and whisk to blend well.
2.      Combine baking soda, salt, flour, and cinnamon.  Add to egg mixture and beat until thoroughly mixed.
3.      Add peeled and thinly sliced apples along with the chopped nuts to batter.  Blend ONLY enough to spread apples and nuts throughout batter.
4.      Pour into a greased and floured 13x9x2-inch pan.  Bake in a 325° oven for 1 hour.
Serve warm or cold with a dollop of whipped cream.  Makes 12 servings.
