Grilled Lemon Chicken:

3 large lemons
1 TBSP olive oil
1 tsp. Greek seasoning (such as Cavenders)
2 tsp. lower sodium soy sauce
4 (6 ounce) skinless, boneless chicken breast halves
cooking spray

grate rind and squeeze juice from 1 lemon to measure 1/2 tsp. and 2 TBSP respectively. Combine lemon rind and juice, olive oil, Greek seasoning, and soy sauce in a large heavy-duty zip-top plastic bag: add chicken to bag. Seal bag and let stand 30 minutes. Cut remaining lemons in half crosswise.

prepare grill.

remove chicken from marinade, discarding marinade. Place chicken on grill rack coated with cooking spray. Grill 8 minutes, turn chicken over and add lemon halves, cut side down, to grill rack. Grill 8 minutes or until chicken is done and lemon is charred. Squeeze lemon over chicken to serve.
