Breadsticks
1/2 TBSP Yeast
4 C. (ish) Flour
2 TBSP Olive Oil
2 TBSP Sugar
1 TBSP Salt
Place 2 C. warm water into a mixing bowl. Add sugar and yeast. Set
aside until foamy about 5 minutes. Add oil, salt and 2 C. flour. Mix well.
Continue adding flour a little at a time until the dough is soft but not super
sticky. You'll most likely exceed the 4 C. to do this but that's ok,
flour is relative! If you're using a machine mixer knead for 5 minutes. If by
hand, turn dough on well floured surface. Roll into a log - long and
narrow - on the counter and cut with pizza cutter. should get 12-16 pieces.
Shape breadsticks. place on greased cookie sheet, cover with a cloth and rise
45 minutes. Preheat oven to 400.
Topping
3 TBSP unsalted butter, melted
1/2 tsp coarse salt
1/4 tsp garlic powder
1 pinch dry oregano
Mix together topping ingredients except butter. Brush the
breadstick dough with half the butter before putting in the oven and sprinkle
with half of the topping. Bake 10-15 minutes. remove to wire rack to cool.
Brush with remaining butter and sprinkle remaining topping.
