I've been making this tart since the 90's. It is so fabulous. I took it to a friend once, can't remember why now. I dropped it off when she wasn't home. She called me later and said it was too pretty to eat - looked like it should be in a magazine. The bottom layer is not crunchy, it's chewy like a sugar cookie.
1st Layer:
1 cup melted butter
2 cups flour
1 ½ cup powdered sugar
Mix together and spread on a 12 by 12 pizza pan. Bake
at 350 for 12-15 minutes. This crust ends up tasting more like a
sugar cookie than a crust. So yummy.
2nd Layer:
8 ounce cream cheese
½ cup sugar
1 cup cool whip
Mix together and spread on cooled crust.
3rd Layer:
2 ½ TBSP of corn starch
¾ cup sugar
1 TBSP lemon juice
Pint of smashed berries
Cook over medium high heat, stirring until it
thickens. Let cool a little before spreading.
Top with fresh berries. We made a strawberry
tart, but my favorite is raspberry. The raspberries are GORGEOUS on
top. Blueberries are also look really nice.
