ROCKY ROAD BARS

from Shannon Farr

2 cups (12 oz package) semi-sweet chocolate chips, divided into 2-1 cup portions
1.5 cups flour  (plus a little extra if needed for high altitude)
1.5 teaspoons baking powder
1 cup sugar
6 tablespoons butter or margarine, softened
1.5 teaspoons vanilla
2 large eggs
2 cups miniature marshmallows
1.5 cups coarsely chopped walnuts  (I found 3/4 cup to be enough)

Preheat oven to 375.  Grease 13x9 inch baking pan
Microwave 1 cup morsels in medium, uncovered microwave safe bowl on HIGH for 1
minute.  Stir.  If necessary, microwave an additional 10-20 seconds, stirring just until
choco chips are melted.  Cool to room temperature.
Combine flour and baking powder in small bowl
Beat sugar, butter and vanilla in large mixer bowl until crumbly.
Beat in eggs.
Add melted chocolate; beat until smooth
Gradually beat in flour mixture
Spread batter into prepared baking pan
Bake for 16-20 minutes or until wooden pick inserted in center comes out slightly sticky
Remove from oven; sprinkle immediately with marshmallows, nut and remaining 1 cup
    morsels.
Return to oven for 2 minutes or just until marshmallows begin to melt.
Cool in pan on wire rack for 20-30 minutes.
Cut into bars with wet knife.  Serve warm.  (they're good cold too!)
