Blender Pancakes

from Carolyn Klein

I got this from the Magic Mill store some years ago. 2 ways to make this, with Whole Wheat Flour or Whole Wheat Kernels. The recipe is the same.  1 Cup Kernels = 1 1/2 c. whole wheat flour.   If you use kernels, just put them in the blender alone and blend them up, then add everything else.

#1:
In Blender

1 1/2 C. Whole Wheat Flour
1 1/2 C. milk
2 Eggs
1/2 C. Oil
2 Tbsp. Honey
1/2 tsp. salt
Blend well.
Add 1 Tbsp. RUMFORD Baking Powder (only Rumford works and makes this foam up to be VERY light)
Pulse a few times.
It will foam up.

#2.  Whole Wheat Kernels

1 C. Kernels
1 C. Milk
Blend for at least 2 minutes.
Add 1/2 cup more milk,
2 eggs
1/4 c. oil
2 T. honey
1/2 tsp. salt
Blend well.
Add 1 Tbsp. Rumford B.P.
Pulse 3 or 4 times.
Done

This works with Rumford because only Rumford does NOT have aluminum in it.  Not good for you.  Not good for the brain.
