Party Chicken Salad


For Salad:
6 chicken breasts, marinated in garlic lime marinade (recipe below), grilled, and cubed
2 c. red grapes cut in half
2 c. green grapes cut in half
4 c. red apples (skins on, cut into chunks)
1 large can of cashews
2 pkgs. bow tie pasta, cooked
2 cans pineapple tidbits (save the juice)
3 chopped green onions
3/4 c. chopped celery (optional)
1 16-oz. bottle of coleslaw dressing
1 c. mayonnaise


For Chicken Marinade:
1/4 c. olive oil
1/4 c. lime (or lemon) juice
1 tsp. salt
½ tsp. pepper
1 tsp. chili powder
1-2 garlic cloves, minced


Plan ahead and marinate chicken for at least 4 hours before grilling it and cutting it into cubes.
Soak chopped apples in pineapple juice to prevent browning and set aside.


Mix together coleslaw dressing, mayonnaise, and a few Tbsp. of the pineapple juice to make dressing mixture and set aside.


Mix chicken, apples, grapes, pasta, cashews, green onions, and celery together.
Pour dressing mixture over and stir to coat all ingredients. Chill.


This salad tastes better the longer it can sit and combine flavors -- overnight if possible.
