Banana Bread

from Linda Carbajal

I got this recipe from a lovely lady at work back in the early 90's.   I love it so much this is the recipe I always use.

5 large bananas
4 eggs, well beaten
1 cup shortening
¾ cup sugar
1 cup Splenda or Sugar
3½ cups flour
1 tsp salt
2 tsp soda
1½  cup broken walnuts

Preheat oven to 325 degrees, grease two loaf pans.

Beat bananas to a liquid; add eggs.

In separate bowl, cream shortening thoroughly, gradually add sugar and beat until fluffy.  Add banana mixture.

Combine flour, soda and salt and blend into batter.  Stir in walnuts.

Bake in two well-greased loaf pans at 325 degrees for 1¼ hours or until firm to the touch.
