Chili


from Melissa Mantor.  We made this for a Blue and Gold banquet a few years ago.  Very tasty.

2lbs. ground beef lean
3-4 cans Bush's chili beans(I mix mild and medium)
1 large can 28 to 30 oz. Diced tomatoes with garlic oregano spice etc
1 green pepper and small sweet onion chopped small
1 small can chopped pieces mushrooms(optional)
1 can 16oz tomato sauce or 8oz tomato paste add can water if you use paste
1 to 2 pkgs Mccormicks chili seasoning to taste. I use hot and mild depending on how spicy you like it.
diced celery (optional)

Use oil to saute onion,green pepper,celery till tender. Meanwhile brown ground beef, drain and add to saute mixture. Add mushrooms, beans. tomatoes, and tomato sauce. Mix well and add your chili spice packets. Let it bubble and turn back to simmer for an hr or two. It's always better the day after for leftovers.   It serves six easily---Enjoy!
