Dinner in a Pumpkin

Dinner in a Pumpkin

1 pumpkin (small enough to fit in your oven)
1 onion, chopped
2 t. oil
2 pds. Ground Beef or turkey
2 T. Soy Sauce
2 T. Brown Sugar
1 4 oz. can mushrooms, drained or fresh mushrooms to taste
1 can cream of chicken soup, undiluted
1 1/2 C. Cooked Rice
1 8 ounce can water chestnuts, drained
Plus any of your favorite veggies; we always add a few cans of whatever veggies are on hand

1. Cut pumpkin top off and clean out interior.
2. Paint face on pumpkin if desired.
3. Preheat oven to 350 degrees
4. Saute onion in oil till tender
5. Add meat and brown.
6. Drain drippings from skillet
7.  Add soy sauce, brown sugar, mushrooms, soup and any additional veggies
8. Simmer 10 minutes stirring occasionally
9. Add cooked rice and water chestnuts
10. Spoon mixture into pumpkin
11. Replace lid on pumpkin and put on a baking sheet and place in oven
12. Bake 1 hour or until you can insert skewer easily into side of pumpkin
13. Remove from oven and allow to cool and put whole thing on the table.
14. When serving, be sure to scrap inside of pumpkin to get a few chunks of pumpkin in each serving.

My kids love this.
