Potato Salad


This recipe comes from the old Better Homes and Garden cookbook.  This is the recipe that most (if not all) of my sisters use.

6 med potatoes cooked and diced
1 cup thinly sliced celery
1/2 cup finely chopped onions
1/3 cup chopped pickle (My family LOVES pickle so we add more in...)
4 hard boiled eggs

1 1/4 cup mayo
2 tsp sugar
2 tsp celery seed
2 tsp vinegar
2 tsp mustard
1 1/2 tsp salt
2 tsp pickle juice (another addition by my family!
Mix these together and add to above ingredients!

One other note, my sister actually likes to make this salad the day before or the morning before and let it sit in the fridge a bit.  She thinks it tastes better that way.
