Taco Casserole

Review - this is FANTASTIC.  I do recommend that you cook on low for the time listed below.  I once tried to rush this dish by cooking on high and cooking a shorter time. The higher heat disintegrated the corn tortillas.  It still tasted good, but cooking on low is best.

2 lbs lean ground beef
2 cans (14.5 ozs) diced tomatoes with green chilies, undrained (or a can 
        of tomatoes and a can of green chilies.)
2-3 cans condensed cream of onion soup (or cream of chicken or celery)
1/4 - 1/2 Cup taco seasoning mix
1/2 cup water
12 corn tortillas cut into 1/2 inch strips
1/2 cup sour cream
3 medium green onions, sliced

Cook beef over medium heat stirring occasionally until brown, drain.
Mix beef, tomatoes, soup, dry seasoning mix and water into slow cooker.
Gently stir in tortilla strips.
Cover and cook on low heat 7-9 hours.
Spread sour cream, cheese and green onions over individual bowls, or
        over top of casserole, as desired.
