Ingredients:
1. Six split chicken breasts
2. Small container of baby
bella mushrooms
3. Small can of corn
4. 1 Large sweet onion
5. 2 Red Peppers
6. Approximately 64 oz of
chicken stock (2 -32 oz containers -chicken broth is ok, but stock is
better)
7. 1 29 oz can (large can) of
tomato sauce
8. 1 29 oz can (large can) of
diced tomatoes
9. 1 large cabbage
10. Bay leaves and assorted spices
(Jamaican Hell Fire Sauce is marvelous) or cayenne pepper, salt, pepper, etc..
11. Four cloves of garlic crushed
(or two heaping table spoons of the chopped garlic in a jar)
Now to the soup assembly:
Bake chicken breasts (350* 17 mins
on each side); while they are cooking get out your soup pot (a big one), dice
up the cabbage into small shreds and dump into the pot. Toss in a couple
of fat bay leaves too. Pour half of the chicken stock and all the canned
tomatoes and tomato sauce over cabbage and start cooking the cabbage down.
Chicky parts should still be cooking
(I assume LOL). So start chopping your veggies (onion, peppers, garlic,
mushrooms, etc) and dump them in. Stir it a bit.
Add your spices.
Add more spices you wimp!
If the chicken is done. Let it
sit on the counter for five minutes. (Why?!) Well first of all, it
is pretty hot to be dicing up just now. Plus it retains more of its
juices and flavor if you let it sit and soak for a few minutes. Just stir
the soup and be patient. Ok, taste the broth. If it brings a tear
to your eye it is spicy enough. If it doesn't you are still being a
wimp. If it is too spicy, well why were you listening to me in the first
place! You should know better than that! Ok ok... add the corn
(drained) and that will "cool down" the spices. (well not
really, they just add color and crunch) LOL Ok.. dice up the chicken,
give Yukon a couple of chunks, and put the rest in the pot.
Cook until veggies are at the texture
you like and the chicken soaks up the soup flavor.
Make the younger kids clean up.
Serve with fresh baked bread or
rolls. Or better yet, just send Sadie out to the grocery store and hit
the bakery aisle for their "fresh baked bread".
