Shrimp on the grill


I got this recipe from an online friend years ago and we LOVE it.  However, Grill Mates doesn't seem to carry the Spicy Caribbean package anymore - at least not in our area.  So, I started buying the Caribbean seasoning and adding the same amount that would have been in a grill mates package which is 1/4 a cup.  It is pretty spicy, so you might want to add less if you don't want as much heat.

2 lbs shrimp, beheaded and shelled
1 pkg of Grill Mates Spicy Caribbean or 1/4 cup McCormick Caribbean Jerk Seasoning
1 - 2 TBSP Old Bay Seasoning
1 bell pepper - bite size
1 onion - bite size
1 cup sliced mushrooms
1 cup grape tomatoes
dash of liquid smoke (you can omit if you wish)
dash of lemon juice (you can omit if you wish)

Toss it all together and let sit for about 15 minutes in bowl or ziplock storage bag.
Locate a grill pan with holes in it (I've seen them at Walmart, Big Lots, Linens and Things)  Like a fry pan, but it has holes.
Basically stir fry this dish on the grill until shrimp is pink and onion is tender.
You'll know when it is done, Shrimp changes color for you.  From grey to a lovely pink and white.
5-15 min tops ought to do it.

You should be able to do this on the stove provided you drain the mix before cooking.
Draining will prevent it from boiling the veggies and everything going mushy.
With the pan it naturally allows the juices and extra liquid ingredients to fall away from the dish.
